Let’s back up 5 or so years ago, to the days when I was literally addicted to Starbucks. It was an unhealthy obsession. I even had the Starbucks GOLD card in my name [NBD]. My
drug drink of choice was a triple grande, non-fat (ha, like that made a difference) vanilla latte. I drank them most days, and more often than I’d like to admit, I had two. And in the fall and winter when the limited edition holiday drinks came out… oh man, game over. Extra hooked.
Let me tell you, those days were not so good for my body, or for my wallet. Now fast forward back to today, after years of slowly converting into the nutrition junkie that I am now, and I would be lying if I said that I still don’t have the odd craving for a PSL when the weather gets colder and the leaves start to fall. Or when the leaves are done falling and we’re left with snow.
The good news, though? I can… no, we all can, make an amazing PSL in the privacy of our own homes, in less time than it takes to get through the morning line at your local Starbucks. Plus, no one will misspell your name!
Even better… you’ll be nourishing your body with beneficial fats from the coconut oil and milk; getting a major dose of nutrients from the pumpkin puree; supporting your blood sugar balance with delicious cinnamon; AND supporting local businesses by buying fresh, locally roasted, delicious coffee… right? 🙂
Did I mention that those awesome fats are going to help you stay full and satisfied throughout the rest of the morning? Seriously, throw a scoop of Vital Proteins collagen in there [my fave!] and you could pretty much just skip breakfast.
KIDDING. Don’t do that. Breakfast is the best.
Needless to say, I see no reason why you wouldn’t whip this up next time the craving hits. Enjoy this frothy, delicious, chemical-free PSL, and put that extra $6 (or more?) towards something much more satisfying. Like new boots.
Because boots + PSLs = a match made in blogger heaven.
- 1 tbsp coconut oil
- 3 tbsp coconut milk
- 1 tbsp pumpkin puree
- 1 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1 tsp honey (unpasteurized)
- 1 cup brewed coffee (the stronger the better, in my opinion!)
- extra cinnamon, for serving
- Combine all ingredients in a small blender.
- Blend on high for a full minute to make it nice and frothy.
- Sprinkle with extra cinnamon, and enjoy!
